鲜莓塔 Fresh Berries Tart

【派皮材料】
牛油125克、盐1⁄2茶匙、香草精1⁄2茶匙、细糖90克、A蛋黄1个、A 蛋1粒、面粉300-330克(筛过)
10公分迷你派模15-18个、鲜黑莓1盒、覆盆子1盒、杏桃糖浆3汤匙+滚水2汤匙、开心果50克(剁碎)
【派皮做法】
1.用FABER搅拌器把牛油、盐、香草精及糖搅拌至发起。
2.加入鸡蛋,搅拌均匀后再拌入面粉,然后以手搓成面团。(图1-2)
3.把面团分小粒,压在派模上,切掉多余的边沿。(图3)
4.把FABER烤炉预热至170℃,然后把派模放入,烤20分钟至微黄。
5.从烤炉取出派模,让它冷却。
【馅料材料】
奶皇粉30克、奶粉3汤匙、鲜奶125毫升、清水125毫升、细糖3汤匙
【馅料做法】
把所有材料混合,然后以手打器搅拌均匀后,倒入不黏锅里。以小火煮至稠滚即熄火,加盖以防止表层结痂。(图4-5)
【派皮做法】
1.把馅料装入挤袋,然后挤入派模至半满。馅料必须带温才好挤。(图6)
2.以鲜莓装饰。在鲜莓和派的边沿刷上杏桃糖浆,然后撒上开心果碎即可。(图7-8)
3.收入冰箱,冷吃。

 

【Crostata casing Ingredients】
125 g butter, 1⁄2 tsp salt, 1⁄2 tsp vanilla essence, 90 g castor sugar, 1 “Grade A” egg yolk, 1 “Grade A” egg
300-330 g plain flour(sifted) 15 – 18 pcs (10 cm) Mini pie casings ,1 box fresh blackberries,
2 boxes fresh raspberries, 3 heaped Tbsps apricot glace + 2 Tbsps hot water [for glacing], 50 g pistachios(chopped)
【Method for Crostata casing】
1. Using FABER Stand Mixer fitted with a paddle attachment, cream butter with salt, vanilla essence & sugar until sugar
dissolves and mixture is creamy.
2. Beat in eggs until mixed, add plain flour. Turn off machine, mix to combine batter into a ball of dough.(pic 1-2)
3. Press the dough into the casing, cutting off extras with a knife.(pic 3)
4. Pre-heat FABER Oven to 170℃, bake crostata casings for 20 minutes or until light browned.
5. Remove & leave casings to cool.
【Filling ingredients】
30g custard, 3 tbsps milk powder, 125 ml fresh milk, 125 ml water, 3 tbsps castor sugar
【To prepare filling】
Combine all filling ingredients using a wire whisk, then pour into non-stick saucepan.Cook over low heat until mixture
thickens and filling comes to a boil. Turn off heat & cover with a lid/ cling film to prevent a layer of skin to form.(pic 4-5)
【To assemble】
1.Using a piping bag, fill up with the filling and pipe filling into crostata shells up to half full. Filling has to be warm / hot
when piping.(pic 6)
2.Decorate with fresh berries. Brush apricot jam mixture over berries & the sides of the crostata. Sprinkle the chopped
pistachios on the sides of crostata & some over the berries. (pic 7-8)
3.Chill & serve cold.
