材料
羊排250克
250g lamb rack

凉拌配料
四季豆、葱头仔1粒
Some French bean and 1 shallot

凉拌调味料
橄榄油1茶匙、黑椒碎少许、盐少许
1 tsp olive oil, dash of black pepper crush and salt

酱汁材料
牛油少许、黑椒碎少许、清水4汤匙、李派林喼汁 2 滴、番茄酱2汤匙、美极生抽皇1汤匙、糖1汤匙
Some butter, black pepper crush, 4 tbsp water, 2 drops of L & P sauce, 2 tbsp tomato sauce, 1 tbsp Maggi soy sauce, 1 tbsp sugar

做法
1.将四季豆清洗后斜切成薄片, 放入沸水中川烫好,捞起过冷水备用。(图1)
1.Wash French beans and cut into thin slices, blanch in boiling water for 30 seconds; and then rinse with cold water. (pic 1)

2.热平底锅加入橄榄油连同黑椒碎和盐炒匀后,即可关火。加入四季豆片拌匀盛出,放入冰箱冷冻备用。 (图2-3)
2.Heat olive oil in pan, add in black pepper crush and salt, stir briefly and turn off heat, toss in French bean until well mixed; keep in fridge.(pic 2-3)

3.平底锅煮溶少许牛油,把羊排的两面以中火煎1⁄2 分钟,取出放入已预热 180℃ 焗炉内,焗15分钟后取出备用。(图4-5)
3.Heat butter in pan, sear each side of lamb chop in medium heat for 1⁄2 minute, and then transfer to pre-heated oven and bake in 180癈 for 15 minutes, remove from oven and set aside.(pic 4-5)

4.酱汁做法:用平底锅煮溶牛油,转小火后加入黑椒碎炒香,顺序加入其余酱汁料煮热即可。(图6-7)
4.Method for sauce: Use the same pan that sear the lamb chop, heat butter in low heat and add in black pepper, follow with all other sauce ingredients.(pic 6-7)

5.最后取出凉拌四季豆盛盘,再把羊排切成厚片摆上 , 淋上酱汁, 即可享用。(图8)
5.Arrange cold salad in plate, cut lamb chop into thick slices; pour sauce over to serve.(pic 8)
