快乐芝麻饼HAPPY SESAME SEED COOKIES

材料
兔子牌咖啡冰糖170克、 二合一怡保白咖啡 6克、牛油180克、盐⅛ 茶匙、香草精½ 茶匙、蛋黄1粒

配料(筛过)
A:普通面粉260克、栗米粉25克、粘米粉1汤匙、发粉½茶匙
B:蛋白1个(当涂液)、白芝麻4汤匙、黑芝麻1汤匙

做法
1.把烤炉预热至180℃,烤盘涂牛油。
2.将牛油、兔子牌咖啡冰糖、香草精 、盐及二合一怡保白咖啡搅拌至发起。
3.加入蛋黄,继续搅拌。
4.然后慢慢加入筛过的配料A,搓成面团。
5.把面团装入塑胶袋,擀成¾公分厚。
6.随意选用饼干切割器,把面团切出形状,涂刷蛋白,然后撒上大量的芝麻。
7.放入预热烤炉烤15分钟至金黄色。在烤架上待凉一阵子后才移到架子上完全冷却。

INGREDIENTS
170g Coffee Rock Sugar, 6g 2 In 1 CHEKHUP Ipoh White Coffee, 180g butter, ⅛ tsp salt, ½ tsp vanilla essence, 1 egg yolk

SUB-INGREDIENTS (sifted)
A:260g plain flour, 25g corn flour, 1 tbsp rice flour, ½ tsp baking powder
B:1 egg white (for glaze), 4 tbsp white sesame seeds, 1 tbsp black sesame seeds

METHOD
1.Preheat oven at 180℃. Grease baking tray with butter.
2.Cream butter, CHEKHUP Coffee Rock Sugar, vanilla essence, salt and CHEKHUP 2 In 1 Ipoh White Coffee until pale and light.
3.Add egg yolk and continue mixing.
4.Stir in sifted dry ingredients A and mix into a dough.
5.Roll out dough into ¾ cm thickness between 2 plastic sheets.
6.Cut with a cookie cutter of your choice. Brush cookies with egg white and sprinkle generously with sesame seeds.
7.Bake in preheated oven for 15 minutes until golden brown. Leave to cool slightly on the baking tray before transferring to a wire rack to cool completely.
