金麦酥虾Prawns with Special Flavoured Oats and Salted Egg Yolks

材料
中虾500克、疯柑叶3片(切细丝)、咖哩叶2束、指天椒4条(剁碎)、即食麦片2汤匙、食油2-3汤匙、淡奶3汤匙

腌料
盐¼茶匙、胡椒粉¼茶匙、白糖½茶匙、麻油½茶匙

调味料(混合)
家乐鸡精粉1½茶匙、黑胡椒粉½茶匙、细糖2汤匙、家乐金沙咸蛋粉4汤匙

做法
1.鲜虾洗净,拌入腌料放置2-3分钟。
2.把虾以大火炸至金黄色,滴干。(图1-2)
3.用不黏锅热2-3汤匙油,把咖哩叶、疯柑叶、指天椒及麦片炒香后盛出。(图3)
4.用同一个锅,加入混合的调味料,小火煮至发泡。(图4-5)
5.加入炸虾,大火迅速兜均,然后加入炒过的香料麦片即可。(图6)

Ingredients
500g medium large prawns, 3 kaffir lime leaves (finely shredded), 2 stalks curry leaves, 4 bird’s eye chilies (chopped), 2 tbsp instant oats, 2–3 tbsp oil, 3 tbsp evaporated milk

Marinade Ingredients
¼ tsp salt, ¼ tsp pepper, ½ tsp sugar, ½ tsp sesame oil

Seasoning (combined)
1½ tsp KNORR Chicken Stock Powder, ½ tsp coarse ground black pepper, 2 tbsp castor sugar, 4 tbsp KNORR Golden Salted Egg Powder

Method
1.Add marinade to the prawns and leave aside for 2-3 minutes.
2.Deep-fry prawns in hot oil over high heat until golden. Remove from oil and leave aside. (pic 1-2)
3.Heat a nonstick fry pan with 2–3 tablespoons oil. Fry curry leaves, kaffir lime leaves, bird’s eye chilies and oats. Sauté briefly. Dish out and put aside. (pic 3)
4.In the same wok, add in combined seasoning and fry over low heat until bubbles start to appear. (pic 4-5)
5.Put in the prawns and stir-fry quickly over high heat. Put back the pre-fried curry leaves mixture to combine. (pic 6)
