素烧卖皇Siew Mai King

【材料】
烧卖皮10张、包菜100g、红萝卜20g(切细)、马铃薯泥100g、香菇50g、五香豆腐一块

【调味料】
盐一茶匙、酱油两茶匙、生粉一汤匙

【做法】
1.将包菜洗净,放入沸水中汆烫捞起,放入冷水中浸透,捞起挤干水份切碎备用。
2.将香菇用温水泡软,捞起沥干水剁碎;豆腐洗净,沥干水切成丁备用。
3.将锅热上油,放豆腐丁和香菇炒香,下调味料加少许水,焖至入味,勾芡后盛盘备用。(图1)
4.冷却后拌入包菜和薯泥混匀后即成馅料。(图2-3)
5.取烧卖皮一张包上馅料,捏成石榴花形状的素生烧卖,沾上红萝卜茸。(图4-6)
6.将素生烧卖装入笼蒸内,等水烧开后,放入蒸笼,用旺火蒸约12分钟,即可食用。(图7)

【Ingredients】
10 sheets Siew mai skin, 50g spinach, 100g cabbage, 20g carrot (finely chopped), 100g mashed potato, 50g mushroom, 1 pieces 5 spiced tofu

【Seasoning】
1 tsp salt, 2 tsp soy sauce, 1 tbsp corn flour

【Method】
1.Wash cabbage, blanch in boiling water, and then soak in cold water until cool down, squeeze out water and chop finely.
2.Soak mushroom with warm water, drain and chop finely; wash tofu and diced.
3.Heat some oil in wok, sauté tofu and mushroom until fragrant, add seasoning with some water, simmer until flavour infused, thicken with starch anddish out.(pic 1)
4.Mixes tofu mixture with cabbage and then mix in mashed potato into filling. (pic 2-3)
5.Wrap each Siew Mai skin with filling, top with chopped carrot.(pic 4-6)
6.Steam the Siew Mai in high heat for about 12 minutes, done.(pic 7)

【烧卖皮材料】
面粉300g,薯粉100g

【烧卖皮做法】
1.将100g面粉放入盆内,倒入适量沸水揉成烫面。
2.其余的面粉和薯粉倒入适量水,揉成生面团。
3.将两块面团放在一起揉匀揉透,盖上湿洁布,放凉发酵。
4.将面团搓成长条,切成约15g一个小面团。
5.将面团按扁,擀成边缘极薄的烧卖皮。

【Siew Mai skin Ingredients】
300g plain flour, 100g tapioca flour

【To prepare Siew Mai skin】
1.Mixes 100g plain flour with some boiling water in mixing bowl and knead into hot dough.
2.Mixes the rest of plain flour and tapioca flour with water, knead into dough.
3.Combine both dough, knead through and cover with wet towel and let rise.
4.Roll out the dough into long shape and then cut into 15g each.
5.Flatten the dough until the edge become very thin.
