鲜虾蔓越莓油饭Prawn Beriani with Dried Cranberries

【材料】
中虾500克(去壳留尾)、白油1茶匙、葱油2汤匙、番茄1粒(切块)

【腌料】混合
葛5汤匙、黄姜粉1茶匙、辣椒粉1茶匙、印度油饭香料混合粉1汤匙、姜茸1汤匙、盐和糖适量

【米料】
印度basmathi糙米500克、盐适量、班兰叶2片(打结)、八角1粒、柚籽3粒、桂皮2公分长、大葱2粒(切片炸至脆)、红萝卜1条(切丝)、薄荷叶½杯、莞荽适量、蔓越莓果干1包、番茄2粒(切块)、额外莞荽

【做法】
1. 用腌料腌虾。(图1)
2. 起锅热油和白油,把虾(连腌汁)及番茄一起煮至熟。(图2-3)
3. 在饭锅内倒入印度basmathi糙米及所有香料,然后间隔地放入酥油葱、蔓越莓果干、红萝卜、番茄及虾,加盖,小火继续煮20分钟。(图 4-8)
4. 掀盖,加入薄荷叶和莞荽装饰即可上桌。(图9)

【INGREDIENTS】
500 g prawns, 1 tsp ghee, 2 tbsps onion oil, 2 fresh tomatoes(sliced)

【MARINATED INGREDIENTS】
5 tbsps yogurt, 1 tsp turmeric powder, 1 tbsp chilly powder, 2 tbsps beriani powder, 1 tbsp ginger paste salt & sugar

【RICE INGREDIENTS】
500g basmathi rice, salt to taste, 2 knotted pandan leaves, 1 star anise, 3 cardamon pods, 2 cm cinnamon stick, 2 big onions(sliced thinly & fried until crispy), 1 carrot (shreadded), ½ cup mint leaves, coriander leaves for garnishing, 1 packet Dried Cranberries

【METHOD】
1. Marinate prawns, set aside. (pic 1)
2. Heat oil & ghee& pan fry the prawns with marinade juices and tomatoes until cooked. Set aside.
3. Place basmathi rice and all spices in a rice cooker, add in some crispy onions, Dried Cranberries, carrots and finally the cokkes tomatoes prawns. Cover lid & let it cook over low heat for 20 minutes.(pic 4-8)
4. Open lid & top with fresh mint leaves, coriander leaves & serve. (pic 9)
