肉鱿双炖Double Boiled Squid

【材料】
猪后腿肉连皮400克、鱿鱼1片、津白8片、姜10克、水800毫升

【调味料】
生抽3汤匙、蚝油1汤匙、黑酱油少许、绍兴酒1汤匙(最后下)

【做法】
1.津白洗净,一片片重叠起来,切大片,然后川烫备用。(图1)
2.猪腿肉川烫沸水5分钟,捞出洗净。(图2)
3.鱿鱼洗净去除外膜;姜切片。
4.炖锅中放入猪肉、鱿鱼及水,炖煮35分钟。(图3-5)
5.加入姜片和津白,继续炖15分钟,便可调入味料,趁热享用。(图6-8)

【Ingredients】
400g pork trotter with skin intact,1 pc squid, 8 sliced Chinese cabbage, 10g ginger, 800ml water

【Seasoning】
3 tbsp soy sauce, 1 tbsp oyster sauce, drops of dark soy sauce, 1 tbsp Chinese cooking wine (add last)

【Method】
1.Wash Chinese cabbage and stack up, cut into big slices and blanch.(pic 1)
2.Wash pork meat and blanch in boiling water; wash and drain.(pic 2)
3.Remove membrane of squid and cut ginger into slices.
4.Place meat, squid and water into pot, stew for 35 minutes.(pic 3-5)
5.Add in ginger slices and Chinese cabbage, continue to stew for 15 minutes; add in seasoning and serve.(pic 6-8)
