    所谓的味念,就是先爆姜,再爆香蒜米,这时,下调味料再把葱花与芫茜拌匀,再加入生抽调配成味念汁。淋上香郁美味的味淋酱,是何的享受。

    Step 1

    将鸡涂上盐,腌1小时,放入滚水里,加盖,用小火煮10分钟,熄火浸泡25分钟。Rub chicken with salt for 1 hour, blanch in boiling water for 10 minutes. Cover the lid, simmer for another 25 minutes.

    Step 2

    将鸡捞起,泡入冰块水里,时到鸡皮脆口,捞起,滴干水,斩块摆在碟里。Soak the chicken into ice water until skin crispy, drain and chopped in bite size, arrange on plate.

    Step 3

    用5大匙油爆香蒜茸和姜茸,加入生抽和蚝油炒香,加入韭菜,青葱和芫茜炒匀,盛起,淋在鸡块上,即可。Heat 5 tbsp oil in wok, saute chopped garlic and ginger till fragrant, add in soy sauce and oyster sauce, stir well. Add in Chives, spring onion and coriander leaves, stir well, pour on top of chicken, done.
