上汤啦啦 La La Soup

材料:
啦啦600克、姜丝50克、蒜茸1/2汤匙、指天椒4条(拍扁)
调味料:
水400毫升、鱼露1汤匙、鸡精15克、味精1茶匙、绍兴酒1 1/2汤匙、生抽2茶匙
做法:
1.啦啦用沸水灼熟,沥干水备用。(图2)
2.用2汤匙油起镬,爆香姜丝、蒜茸及指天椒。(图3)
3.加入调味料煮滚,试味。(图4)
4.加入啦啦再煮滚,用少许生粉勾薄芡,便可上碟享用。(图5)
INGREDIENTS:
600g la la (clams), 50g juliennes ginger, 1/2 tbsp chopped garlic, 4 chili padi (smashed)
SEASONING:
400ml water, 1 tbsp fish sauce, 15g chicken stock granule, 1 tsp MSG, 1 1/2 tbsp Chinese wine, 2 tsp soy sauce
METHOD:
1.Blanch la la boiling water until cooked, drain. (pic 2)
2.Saut’e ginger, garlic and chili padi with 2 tbsp oil until fragrant. (pic 3)
3.Pour in seasoning, bring to a boil. (pic 4)
4.Toss in la la and bring to boil again, thicken with light starch solution and dish out. (pic 5)
