    Step 1

    把羊角豆斜切成2公分长段。Cut ladies’ fingers into 2 cm slanting slices.

    起锅热油,把芥末籽,葫芦巴籽,咖哩叶及辣椒干爆香至芥末籽爆开,加入大葱,再炒1分钟。Heat oil in a wok and sprinkle in mustard seeds,fenugreek,curry leaves and dried chillies.Once mustard seeds start to crack add in onion.Sauté for a minute.

    Step 3

    加入黄姜粉,盐及胡椒粉,然后放入羊角豆,以中火炒约7-8分钟。Stir in turmeric powder,salt and pepper.Add ladies’ fingers and fry over medium heat for about 7-8 minutes.

    Step 4

    加入优葛,兜炒约1-2分钟即可盛出。Add in yoghurt and toss gently for 1-2 minutes.Dish out and serve at once.
