    芋头口感细软,绵甜香糯,营养价值近似于土豆,易于消化而不会引起中毒,是一种很好的碱性食物。

    Step 1

    把金桥牌原味猪午餐肉放入热油里炸至金黄色捞起,滤干油,待用。Deep fry sliced Golden Bridge Pork Luncheon Meat in hot oil until golden brown, drain.

    Step 2

    将芋头片放入热油锅中炸至浮起或熟透,捞出滤干油备用。Blanch sliced yam in hot oil until afloat (or cooked ), drain and set aside.

    Step 3

    在锅里热油,爆香蒜茸和葱头仔碎,加入芫茜茎碎和南乳炒香,加入其余调味料煮滚后注入粟粉水打芡。Heat 2 tbsp oil in wok, saute garlic and shallot until fragrant; add in coriander and red fermented bean curd and stir-fry until fragrant; and then add in seasoning and bring to boil, thicken with starch.

    Step 4

    将炸好的午餐肉和芋头间隔排在大碗里,淋上煮好的调味料,用耐热保鲜纸包好,放入蒸笼蒸2小时。Arrange fried Pork Luncheon Meat and yam alternately in plate, pour in sauce and cover with cling; steam in steamer for 2 hours.

    Step 5

    取出午餐扣肉,扣在碟里,洒上适量芫茜葱,即可。Dish out and dislodge on serving plate, garnish with some spring onion and coriander, done.
