咸蛋虾球Salted Egg Prawn Ball

【材料】
大虾300克、咸蛋黄 5粒(煮熟)、葱20克(切小粒)、红辣椒10克(剁碎)、鸡蛋1粒

【调味料】
盐½茶匙薯粉、2茶匙胡椒粉、½茶匙橄榄油、2茶匙

【做法】
1.将虾洗净,切开背部,然后加入鸡蛋,薯粉和盐拌匀后加入橄榄油搅拌好备用。(图1-3)
2.锅内热油,放入大虾炸至表面变白捞起备用。(图4)
3.将咸蛋黄压碎备用。(图5)
4.热蝸倒入少许的橄榄油,放入咸蛋黄和盐,不停的搅拌炒至冒泡。(图6-7)
5.再放入大虾,葱和辣椒末炒至搅拌均匀即可。(图8)

【INGREDIENTS】
300g big prawns, 5 pcs slated egg yolks (boiled), 20g chopped spring onion, 10g chopped red chilli, 1 eggSEASONING :Dash of salt and pepper, some olive oil, 2 tsp tapioca flour

【METHOD】
1.Open cut the back of prawns, marinate with egg sauce, tapioca flour and salt, and then mix in olive oil. (pic 1-3)
2.Heat oil in wok, deep fry prawn briskly until changed of colour, drain. (pic 4)
3.Smashed the salted egg yolks, set aside. (pic 5)
4.Heat some olive oil in hot wok, add in salted egg yolk and salt, keep on stirring until bubbling.(pic 6-7)
5.Toss in prawns, spring onion and red chilli; stir until well mixed. (pic 8)
