    心得交流站 :炸咸鱼时不可以马上翻动,一定要将一边炸脆了才可以反动,不然很容易炸到碎。

    Step 1

    鸡肉加入腌料腌制2小时。Marinate chicken meat for 2 hours.

    Step 2

    将咸鱼肉洗净,切小块,浸水。Wash salted fish,cut into small pieces and then soak in water.

    Step 3

    烧热5汤匙油,将咸鱼挤干水,放进油镬里炸至金黄色和脆,捞起。Heat 5 tbsp oil in wok,add in drain salted fish,saute until aromatic and crispy,dish out.

    Step 4

    留着2汤匙油爆香配料然后加入鸡肉炒匀,再加入100毫升水和咸鱼,加上镬盖用小火焖煮至微干,试味即可。Keep 2 tbsp oil in wok,saute sub-ingredients until fragrant, toss in chicken and stir to mix;add in 100ml water and salted fish,cover lid and simmer in low heat until gravy dries up;season to taste.
