    心得交流站 :苦瓜冰水,可使到苦瓜更有口感。

    Step 1

    将苦瓜切片后,用冰水浸10分钟滤干。Sliced and soaked bitter gourd in ice water for 10 minutes, drain.

    Step 2

    烧滚半镬水,加入糖、油各1茶匙、盐1/2茶匙,放入苦瓜片烫过捞起备用。Boil half pot of water,add in 1tsp each of sugar and oil, 1/2tsp salt,then put in bitter gourd to blanch,dish out and drain.

    Step 3

    把矮瓜切小块,拉油备用。Cut eggplant into pieces,blanch in hot oil.

    Step 4

    爆香材料C,加入矮瓜及调味料煮至汁浓关火,加入材料B炒勻上碟,趁熱享用。Sauté ingredients C in wok until fragrant,add in eggplant,bitter gourd and seasoning,stir-fry until gravy thicken,off heat,toss in ingredients B and dish out.
