娘惹风味清蒸鲈鱼 Steamed Sea Bass with Nyonya Spicy Sauce

材料:
鲈鱼400克 (两片,去骨)、生姜10克10克(切片)
酱料材料:
姜花100克、香茅50克、红葱50克、蒜米25克 、黄姜25克、指
天椒42克、泰式辣椒酱300克 、酸柑7粒、油125毫升
酱料做法:
1. 酸柑切半挤出果汁,去除种子,果汁和皮分开备用。
2.把酸柑皮,姜花,香茅红葱,蒜米,黄姜和指天椒去皮后切成小块。
3. 在一个大碗中,倒入泰式辣椒酱和酸柑汁混合均匀,加入所有小块的材料,隔夜腌制软化为最佳。
4. 用搅拌机把腌制的材料和油全部一起搅烂即可。
做法:
1. 鲈鱼处理干净后摆上蒸盘放入蒸锅,撒上姜片,盖上锅子小火蒸约 4分钟,或至8分熟。
2. 开盖淋上一层娘惹酱,蒸至熟透即可上菜。
小贴士:食材可以提前一天腌制,让隔夜,软化。搅烂的过程会更加轻松哦!

Ingredients :
1 fillet Sea bass、10gm Ginger sliced
Sauce:
100gm Ginger Flower、50gm Lemon grass、50gm Shallot、
25gm Garlic、25gm Turmeric、42gm Green Chilli Padi、
300gm Thai Chilli、7 nos Lime、125ml Oil
Preparation method for the sauce :
1. Squeeze out calamansi juice, set aside with skin separate and seed removed.
2. Peel all wet spices, cut into smaller pieces.
3. In a huge bowl, mix well Thai chili sauce and calamansi juice, then
add in all wet spices and set overnight to soften the ingredients.
4. Use a suitable blender or food processor to blend all ingredients including oil, ready to use.
Preparation method :
1. Steam the fish using a steamer with ginger slice on the fish, for
about 4 minutes or until 80% cooked.
2. Spread a layer of the sauce on the fish and continue steam until
the fish fully cooked, serve.
