干酪芝士烤三文鱼 配柠檬奶油酱 Baked Parmesan Crusted Salmon With Lemon Cream Sauce

材料 :
三文鱼1.4公斤、芥末3-4汤匙
干酪芝士料 :
100克面包糠、50克融化牛油、40克帕美森芝士、2汤匙剁碎
莳萝、2汤匙剁碎香菜、1个柠檬皮、½茶匙盐、胡椒粉
柠檬奶油酱 :
30克牛油、1粒小葱头(剁碎)、1汤匙芥末、375毫升奶油、2½
汤匙柠檬汁、½茶匙糖、盐和胡椒粉适量
做法 :
1. 把烤炉预热至180°C。
2. 将三文鱼放在耐热烤盘上。
3. 把芥末抹在三文鱼皮上。(图1)
4. 另外把面包糠、牛油、芝士,莳萝、柠檬皮茸、盐及胡椒粉混合在碗里。(图2-5)
5. 把混合料涂抹的三文鱼全身,然后放入烤炉里烤20分钟至表皮转金黄色。(图6-7)
6. 从烤炉取出鱼后配酱汁吃。
酱汁做法 :
1. 起锅热牛油,把小葱头及芥末炒香,然后加入奶油、柠檬汁、糖、盐及胡椒粉,试味。(图8-11)
2. 煮至酱汁滚即熄火。

INGREDIENTS :
1.4 kg salmon, 3-4 tbsp mustard
CRUST :
100g breadcrumbs, 50g melted butter, 40g
parmesan cheese, 2 tbsp finely chopped dill,
2 tbsp finely chopped parsley, zest of 1 lemon,
½ tsp salt, grated pepper
LEMON CREAM SAUCE :
30g butter, 1 shallot(chopped), 1 tbsp mustard,
375ml cream, 2½ tbsp lemon juice, ½ tsp sugar,
salt & pepper to taste
METHOD :
1. Preheat oven to 180°C.
2. Place salmon into a heat proof tray.
3. Spread the mustard on the skin of the salmon.(Pic 1)
4. In a mixing bowl, combine breadcrumbs with melted butter, parmesan cheese, dill, parsley,
zest of lemon, salt & pepper. (Pic 2-5)
5. Spread crumbs all over the salmon and bake for 20 minutes or until crumbs are golden
brown. (Pic 6-7)
6. Remove and serve with its sauce.
TO PREPARE SAUCE :
1. Heat butter in a saucepan, saute shallots and add mustard, cream, lemon juice, sugar, salt
& pepper to taste. (Pic 8-11)
2. Turn off heat once sauce comes to a boil.
