手撕比萨 Pull apart Pizza

【比萨皮材料】
A:白糖25克+即发酵母1⁄2汤匙+ 温水3汤匙
B:高筋面粉300克、盐 1⁄2茶匙、A蛋 1⁄2 个、牛油1汤匙、面包软化剂 1⁄2 茶匙、清水175-180毫升、mozarella芝士300克
【馅料】
现买意粉酱料1罐(680克)、鸡肉碎250克、大葱1粒(切丁)、盐和胡椒粉适量、薄荷叶/九层塔适量
【馅料做法】
起锅热油,把大葱炒至软,然后加入鸡肉碎,炒熟后加入剩余材料,待凉。(图1)
【比萨皮做法】
1. 把白糖、酵母及温水混合,让酵母软化成起泡状。
2. 用电动搅拌器,筛入面粉和面包软化剂,加入盐、牛油及鸡蛋,倒入混合料A,一面搅拌一面加水至搅拌成光滑面团。(图2-4)
3. 让面团放置一旁休息至发成双倍大。
【做法】
1. 把面团放在撒粉工作台上擀平,然后移到涂油的圆盘里,继续把面皮拉扯开至填满整个圆盘。
2. 把肉碎酱铺在面皮中央成环状,撒上芝士。(图5-6)
3. 沿着面团边缘刷上蛋液,然后把面皮向内反摺,压紧。(图7)
4. 放入预热至190°C的烤炉里烤25-30分钟即可。(图8)

【Pizza Dough Ingredients】
A:25 g sugar + 1⁄2tbsp instant yeast + 3 tbsps lukewarm water, 175 -180 ml water
B:300 g high protein flour, 1⁄2 tsp salt, 1⁄2 “Grade A’ egg, 1 tbsp butter , 1⁄2 tsp bread softener, ,200 g mozzarella cheese
【Filling】
1 jar store bought pasta sauce (680g),250g minced chicken meat, 1 big onion(cubed), salt and pepper to taste, mint leaves\ basil leaves to taste
【Method for filling】
Heat oil in pan, sauté onions until soften, add in minced chicken meat and stir-frying until cooked, add remaining ingredients, adjust seasonings to taste and leave to cool. (pic 1)
【To prepare pizza dough】
1. Combine sugar, yeast and warm water, let the yeast softens and begins to form a creamy foam.
2. Using an electric beater fitted with a dough hook, sift in flour and bread softener, add salt, butter and egg, pour in mixture A and beat slowly, adding water at a time until dough combines.(pic 2-4)
3. Rest the dough, covered with tea towel until dough doubles in size.
【Method】
1. Roll dough on a flour dusted table, and then transfer the dough onto the greased tray and continue rolling the dough out until it covers the whole tray.
2. Spread the sauce filling into a circle on dough, drizzle the mozzarella cheese over filling.(pic 5-6)
3. Brush egg sauce on the side of the pizza dough. Cover the filling with the dough pressing sides to seal.(pic 7)
4. Bake in pre-heat oven at 190°C for 25-30 minutes till done.(pic 8)
