指天椒皮蛋Chill Century Egg

【材料】
皮蛋2只、指天椒1-2条、蒜头2大粒(剥皮)、芫荽适量(切碎)

【酱汁材料】
生抽 1 ½茶匙、砂糖1 ½茶匙、米酒1茶匙、麻油 1茶匙、辣椒油1茶匙

【做法】
1. 皮蛋去壳,一只皮蛋切开八等分排好在碟子;将芫荽切碎撒在皮蛋上。(图1-2)
2. 酱汁做法:生抽、糖、辣椒油、麻油及蚝油全部拌匀放在一旁备用。
3. 指天椒去蒂,切开去籽然后切碎;蒜头剁碎备用。
4. 把锅烧热放入指天椒碎兜炒至出味,之后加入蒜头炒匀,灒入绍兴酒。(图3-4)
5. 加入已经拌好的酱汁煮至滚,淋在皮蛋上即可。(图5)

【Ingredients】
2 century eggs, 1-2 red chilli padi, 2 whole garlic (peeled) , some coriander

【Sauce Ingredients】
1 ½ tsp soy sauce, 1 ½ tsp palm sugar, 1 tsp rice wine, 1 tsp sesame oil, 1 tsp chili oil

【Method】
1. Shelled century eggs and cut into 8 equal portions; arrange in plate and sprinkle chopped coriander on top.(pic 1-2)
2. To prepare sauce: Mix soy sauce, sugar, chilli oil, sesame oil and oyster sauce in a bowl, set aside.
3. Trim off the tips of chili padi, remove seeds and chop coarsely; chop garlic and premix all seasoning.
4. Heat oil in wok, sauté chili until fragrant, add in garlic and Chinese cooking wine, mix well. (pic 3-4)
5. Add in premixed seasoning; and then pour the gravy over the century eggs, done.(pic 5)
