日式炸鸡 Karaage Chicken

【材料】
去骨鸡全腿肉2只
【鸡肉腌料】
姜汁2汤匙、胡椒粉1茶匙、鸡粉1茶匙、鸡蛋1粒、栗米
粉1汤匙、盐适量、薯粉3⁄4杯
【沾酱】
美奶滋/番茄酱/辣椒酱
【做法】
1. 用刀背敲松鸡肉,然后切小块。(图1)
2. 以腌料腌鸡肉至少20分钟。(图2-4)
3. 把鸡块均匀扑上薯粉。(图5)
4. 起锅热油,分数次放入鸡肉块,先大火炸一轮,滴干油后再以中火炸一轮。(图6)
5. 把炸鸡肉放在纸巾上吸干油,随意配沾酱吃。

【Ingredients】
2 pcs deboned chicken whole legs
【Marinates for chicken】
2 tbsps ginger juice, 1 tsp ground pepper, 1 tsp chicken stock granules, 1 egg, 1 tbsp cornflour, salt to taste, 3⁄4 cup tapioca flour or cornflour
【Dipping sauce】
mayonnaise / tomato sauce/ chili sauce
【Method】
1. Lightly pound the chicken meat with the back of the cleaver, then cut into bite size.(pic 1)
2. Marinade chicken meat with the marinates for about 20 minutes minimum.(pic 2-4)
3. Coat each piece of chicken in the flour, pressing firmly to coat well.(pic 5)
4. Heat oil in a wok, deep fry the chicken pieces a few pieces at a time in high heat for about 1⁄2 minute, then turn down to medium heat to finish cooking. (pic 6)
5. Drain on paper towels and serve hot as an appetizer with Japanese mayo and tomato / chilly sauce.
