椰浆饭蛋糕 Nasi Lemak Cake

椰浆饭材料
白米400克(洗净)、椰浆头200毫升、清水150毫升、嫩姜3公分、大葱2粒(切丝)、香茅1枝 (拍烂)、盐适量、班兰叶2片(打结)
椰浆饭做法
白米洗净,与其他材料一起放入电子饭煲内煮至熟。
配料
水煮蛋(切片)、青瓜(切片)、烫熟大虾10只、臭豆1包(烫熟滴干)、炸江鱼仔和香蕉叶适量
干鱿鱼叁峇
A : 干鱿鱼500克(浸泡)、桔子 9(取汁)
B : 蒜头2瓣、老姜10克、辣椒干30条(浸泡)、红辣椒5条、小葱头100克、大葱200克
C : 盐2茶匙、椰糖200克、清水400毫升、黑酱油1茶匙
做法
1 干鱿鱼叁峇做法:把干鱿鱼切成5 X4 公分长方形。
2 煮一锅加了桔子汁的水,把干鱿鱼煮至脱皮后以水龙头水冲洗干净后滴干。
3 叁峇做法:起锅热油,把香料炒香。加入干鱿鱼,炒2分钟。加入材料C,焖煮10分钟即可。
4 组合:取一个9寸可拆卸圆蛋糕盘,底层铺烫过的香蕉叶。(图2)
5 把温的椰浆饭铺入,厚度约2.5寸,让它冷却定型。(图3)
6 将米饭蛋糕脱模, 以青瓜片围绕并以竹签固定,然后以绳子绑紧。(图4-6)
7 在米饭蛋糕上排入干鱿鱼叁峇,旁边摆上虾肉和臭豆,再放上煮蛋和炸江鱼仔即可。(图7-8)

NASI LEMAK INGREDIENTS
400 g long grain rice(washed), 200 ml thick coconut milk, 150 ml water, 3cm young ginger (sliced), 2 big onions(sliced), 1 stalk lemon grass (bruised lightly), A pinch of salt, 2 pandan leaves (knotted)
METHOD FOR RICE
Wash rice, drain and place rice in electric rice cooker together with the rest of the ingredients, cook until done.
SUB-INGREDIENTS
Boiled egg(sliced), cucumber (sliced), 10 large prawns (blanch), 1 packet petai(boiled till cook & drained), fried anchovies, banana leaf
SAMBAL SOTONG KERING
A : 500 g soaked dried cuttlefish, 3 kalamansi lime juice
B : 2 cloves garlic, 10g old ginger, 30 stalks dried chilly (soaked), 5 stalks fresh chilly, 100g shallots, 200g big onions
C : 2 tsps salt, 200g palm sugar, 400 ml water, 1 tsp dark soya sauce
METHOD
1 Sambal Sotong Kering : Cut soaked squid into pieces about 5 X 4cm rectangles.
2 Boil a pot of water with limes juice and scald the squid until skin rolls out; and then drench in cool tap water, clean and drain.
3 To Cook Sambal : Heat oil, add in spice paste & saute till fragrant. Add in cuttlefish and stir for 2 minutes. Add in all ingredients C, simmer for 10 minutes, done.
4 To Assemble : Take an 9 inches round loose bottom cake pan & line the bottom with scalded banana leaf. (pic 2)
5 Press the warm cooked nasi lemak right up to 2.5 inches high, let it cool to set. (pic 3)
6 Unmould the rice cake from the tin and wrap around the cake with sliced cucumber; use bamboo skewers to hold the cucumber in place until you tie it with a string. (pic 4-6)
7 Top the rice cake with sambal sotong, follow with prawns & petai on the sides before garnishing with crispy anchovies & boiled egg. (pic 7-8)
