杨桃辣椒蟹Kepiting Belimbing

【材料】
A:螃蟹2只(约1.2公斤,洗净)、食油6汤匙、清水350-500毫升、盐适量、鸡蛋1粒(打散)
B:小葱头15粒(约150克)、蒜头4瓣、嫩姜12克、指天椒5条(全部剁碎)、峇拉煎1 1/2茶匙
C:番茄酱4汤匙、辣椒酱3汤匙、杨桃300克(剁碎)、黄梨150克(剁碎)

【研磨香料】
石古仔3粒、辣椒干6条(浸泡后切成3公分长)

【做法】
1.起锅热油,以中火把材料B爆香,然后加入研磨香料及番茄酱、辣椒酱、杨桃及黄梨炒均,以盐调味。 (图1-4)
2.加入螃蟹和清水,煮10分钟或至蟹熟,再试味。(图5-6)
3.离锅前倒入蛋液,一凝固就盛出上桌。(图7)

【Ingredients】
A: 2 crabs (about 1.2 kgs, cleaned), 6-8tbsps cooking oil, 350ml-500ml water, salt to taste, 1 egg (beaten lightly)
B: 15 shallots(150 g), 4 cloves garlic, 6cm(12g)young ginger, 5 stalks chili padi(chopped all), 1 1/2tsp belachan
C: 4 tbsps tomato ketchup, 3 tbsps chili sauce orto taste, 300g fresh star fruit (chopped),150g pineapple(chopped)

【Spicepaste】finely ground
3 candlenuts, 6 stalks dried chili (soaked & cut into 3cm lengths)

【Method】
1.In a large skillet or wok, heat the oil over medium heat, sautéing ingredients B, and stirring often until fragrant. Add the finely ground dried chillies & candlenut. Add ketchup, chilly sauce, starfruit, pineapple flesh and salt to taste. (pic 1-4)
2.Add crabs, water and cook for 10 minutes or until crabs are cooked, adjusting seasonings to taste. (pic 5-6)
3.Just before removing from heat stir in the beaten egg and once it sets, remove to serve immediately.(pic 7)
