北马峇峇娘惹的家喻户晓的8大菜肴之一,是祭祖仪式的菜肴,也出现在大日子。虽然名称像是只有两样食材,其实还有好多配搭的原料。有些家庭没有放腌蒜,却加入了少量的豆瓣酱提味。娘惹厨房里的沙葛炒鱿鱼各家各户都有自己的特色。

    Step 1

    把油烧热,加入葱、姜、蒜和腌蒜炒至香, 加入肉碎、虾仁碎、冬菇和鱿鱼丝炒香。Heat oil in wok, saute onions, ginger, garlic and pickled garlic until fragrant, add in minced meat, minced shrimp, mushrooms and shredded dried cuttlefish, stir fry well.

    Step 2

    加入红萝卜丝、四季豆粒继续爆炒一下。Add shredded carrots and diced french beans continue stir fry.

    Step 3

    放入沙葛、包菜一起搅拌均匀,倒入水盖好小火焖煮15分钟左右直到沙葛变成透明。Add shredded Yam Bean and cabbage and stir evenly, pour in water, cover and simmer for about 15 minutes until shredded Yam Bean becomes transparent.

    Step 4

    最后加入海盐、糖、胡椒粉、绍兴酒和麻油适量调味就好了。Lastly season with sea salt, sugar, white pepper powder, ShaoXin cooking wine and sesame oil.
