法式蓝带鸡扒 Chicken Cordon Blue

材料:

鸡胸肉4副、少许盐、胡椒粉、芥茉酱、HP酱、火腿肉4片、Cheddar芝士4片、面粉120克、蛋2粒(打散)、粟米片150克、少许生菜

百香果香橙酱材料:

百香果80克、橙汁100毫升、橙茸1/2粒、少许糖、盐、蜜糖、薯粉10克(以25毫升水稀释)

百香果香橙酱做法

在锅内将百香果、橙汁及橙茸捞匀煮滚,加少许盐、糖及蜜糖调味,再以少许薯粉水勾芡。

鸡肉做法:

1.将鸡胸肉摊开成蝴蝶形,用槌子槌松,再用少许盐、胡椒粉、芥茉酱及HP酱腌好。(图1)

2.在鸡肉中央铺上一片芝士和火腿肉,折好,以牙签固定。(图2)

3.将鸡肉卷沾上面粉,再沾鸡蛋,最后沾上粟米片,收入冰箱约10分钟。(图3-5)

4.将鸡肉卷放入空气炸锅中炸至金黄色即可。(图6)

5.吃时配搭生菜,并淋上百香果香橙酱一起享用。

【Ingredient】

4no chicken breast, salt, pepper, mustard, Hp sauce, 4pcs Turkey Ham, 4 Slice cheddar cheese, 120gm all purpose flour, 2no egg wash, 150gm cornflake(blended into crumbs), 4 portion mixed lettuce

【Passion fruit and orange gleze】

80gm Passion fruit, 100ml Orange juice, 1/2 orange zest, sugar, honey, salt, 10gm Potato starch(diluted with 25ml of water)

【To prepare glaze】

Combine passion fruit, orange juice and zest in a pan. Heat till warm; season to taste with sugar, honey and a pinch of salt. Thicken with potato starch.

【To prepare chicken】

1.Split open chicken breast into butterfly shape. Slightly flatten with meat mallet. Season to taste with mustard, hp sauce, salt and pepper.(pic 1)

2.Lay ham and cheese on each chicken breast and fold all the side to enclose with filling.(pic 2)

3.Pane the chicken by coating with flour, dipped into egg wash and coated with breadcrumbs. Rest in the refrigerator for 10 minutes.(pic 3-5)

4.Deep fried in deep fryer till golden brown. Served hot with mixed lettuce and pour fruit sauce over.(pic 6)
