龟纹芝士蛋糕 Baked Turtle cheesecake

饼层材料
消化饼200克(压碎)、黄糖30克、TATURA牛油180克(溶解)
200g digestive biscuit(crushed finely), 30g brown sugar,180g TATURA butter(melted)

馅料
TATURA芝士奶油500克、细糖80克、盐1⁄2茶匙、栗米粉20克、A蛋4粒(打散)、PAUL’s Thickened Cream300毫升、1粒柠檬取皮茸、樱桃酱150克、巧克力米250克
500g TATURA cream cheese, 80g castor sugar, 1⁄2 tsp salt,20 g corn flour, 4 “Grade A” eggs (lightly beaten), 300 ml PAUL’s Thickened Cream(grated lemon rind from 1 lemon), 150g cherry pie filling, 250g choc chips

糖焦材料
黄糖100克、PAUL’s Thickened Cream150毫升、TATURA牛油30克(切块)
100 g brown sugar, 150 ml PAUL’s Thickened Cream, 30g TATURA butter(chopped)

9寸可拆卸圆烤盘(涂油铺铝箔)
9″ round loose bottom cake pan (greased & lined with foil)

装饰
新鲜草莓、蓝莓及奇异果各适量
Fresh strawberries, Blueberries, Kiwi

糖焦做法
把所有材料放入小锅里以中火煮3分钟至滚后转小火,继续搅拌 2分钟后熄火,置放一旁。(图1)
Combine all ingredients in a saucepan and cook over medium heat, stirring for 3 minutes or until sauce comes to the boil. Reduce heat to low and simmer for 2 minutes, keep aside. (pic 1)

饼层材料做法
把黄糖和饼干碎混合,然后加入溶解的TATURA牛油,搅拌成面包糠状,然后挤压至烤盘上成模,收入冰箱待用。(图2)
In a mixing bowl, combine the brown sugar with the digestive biscuit crumbs.Pour in melted TATURA butter and mix until it looks like breadcrumbs. Press onto the greased pan and refrigerate.(pic 2)

馅料做法
1.把TATURA芝士奶油和栗米粉、盐及糖混合,搅拌至乳化后, 把蛋逐粒加入搅拌。
1.In a mixing bowl, cream TATURA cream cheese with corn flour, salt, sugar until creamy. Beat in eggs one at a time.

2.加入PAUL’s Thickened Cream,搅拌均匀后关掉搅拌机。(图3)
2.Beat in the PAUL’s Thickened Cream until well mixed. Turn off the beater.(pic 3)

3.加入柠檬皮茸,把材料倒入饼层上。(图4)
3.Grate in the lemon rind. Pour onto the chilled crust.(pic 4)

4.倒入草莓酱,再撒入巧克力米,放入预热至170℃的烤炉里隔水烤55分钟。(图5-6)
4.Dollop the pie filling inside and choc chips. Preheat oven at 170℃, bake in a water bath for 55 minutes.(pic 5-6)

5.关掉烤炉,让蛋糕在里头待20分钟,然后开着烤炉门,让蛋糕完全冷却后才取出。
5.Turn off the oven and leave the cheesecake in the closed oven for 20 minutes before opening the oven door and leave the cake to cool inside.

6.把冷却的蛋糕收入冰箱。
6.Refrigerate the completely cooled cheesecake.

装饰
把新鲜水果料铺在冷却的芝士蛋糕上。用挤袋把糖焦挤在表面上,再收入冰箱,切块吃。(图7-8)
Place the fresh berries and kiwis over the cooled cheesecake.Using a piping bag, pipe the caramel all over the fruits and cheesecake. Refrigerate and slice to serve.(pic 7-8)
