┃泰式鱼饼材料┃
A: 虾肉15 0克、鱼肉15 0克、A蛋1粒、泰国红咖喱酱3汤匙、50克椰浆、鱼露1茶匙
B: 长豆60克(切碎)、疯柑叶5片(切细)、面包糠100克
┃蘸酱材料┃混合
糖6汤匙、指天椒2条(剁碎)、蒜2瓣(剁碎)、芫荽叶1汤匙(剁碎)、白醋2汤匙、鱼露2汤匙、酸柑水1汤匙
┃鱼饼做法┃
1. 将材料A放入食物搅拌器内拌打至细。加入材料B的长豆及疯柑叶拌匀,收入冰箱冷藏。(图1)
2. 取出鱼饼料,用手搓成圆形,沾上面包糠后按扁,再收入冰箱。(图2)
┃鸡肉卷材料┃
鸡肉300克(切条)、马蹄5粒(切粒)、大葱1粒(切细)、五香粉1½茶匙、蚝油1汤匙、粟粉2汤匙、麻油1茶匙、糖2汤匙、胡椒粉½茶匙、盐½茶匙
7寸长腐竹皮、食油适量
┃鸡肉卷做法┃
1. 在大碗内将所有材料混合,收入冰箱30分钟。(图3)
2. 桌上放一片腐竹皮,铺上鸡肉馅料,卷起成瑞士卷长形,沿边沾上面粉浆固定。(图4)

1. 启动 ELBA空气炸锅 ,设定180℃自动预热。预热完毕就会发出“哔”声响。(图5)
2. 在炸篮内涂抹少许油,分别放入鱼饼及鸡肉卷,在鱼饼及鸡肉卷上也涂抹少许油。(图6-7)
3. 设时10-12分钟开始烹调。完成后会发出“哔”声响。(图8-9)
4. 将鸡肉卷切2公分长,与鱼饼一起享用。

| THAI FISH CAKE INGREDIENTS |
A: 150g shrimp, 150g fish flesh, 1 “Grade A”egg, 3 tbsps Thai red curry paste, 50g coconut milk, 1 tsp fish sauce
B: 60g long beans(sliced), 5 pieces kaffir lime leaves (sliced), 100g breadcrumbs
| DIPPING SAUCE INGREDIENTS | combine
6 tbsps sugar, 2 bird’s eye chilly (sliced), 2 cloves garlic (chopped), 1 tbsp cilantro leaves (chopped), 2 tbsps white vinegar, 2 tbsps fish sauce, 1 tbsp kalamansi lime juice
| METHOD FOR FISH CAKE |
1. Blend ingredients A in a food processor till fine. Mix in the sliced long beans & kaffir lime leaves. Refrigerate. (pic 1)
2. Scoop out the fish & prawn paste; about the size of a ping pong ball and roll in the breadcrumbs. Flatten it lightly, refrigerate as this helps hold the crumbs. (pic 2)

300g chicken fillet(sliced), 5 water chestnuts (julienne), 1 big onion(sliced), 1 ½ tsps chinese five spice powder, 1 tbsp oyster sauce, 2 tbsps tapioca flour, 1 tsp sesame oil, 2 tbsps sugar, ½ tsp pepper, ½ tsp salt
7” dried bean curd skins, cooking oil for greasing

1. Combine all ingredients in a mixing bowl. Refrigerate for 30 minutes. (pic 3)
2. Place 1 tbsp of filling on beancurd sheet, roll up tightly to form a swiss roll and seal with flour batter. (pic 4)

1. Turn on ELBA Air Fryer, select temperature to 180ºC.(pic 5)
2. Once it beeps, grease the rack and place law bak on the rack, lightly grease the fish cake and chicken law bak. (pic 6-7)
3. Push in the rack & select timer to 10 or 12 minutes. Once ready the air fryer shall beep. (pic 8-9)
4. Cut chicken law bak into 2 cm lengths and serve together with Thai fish cake.
