取出100克虾肉切粗粒备用,将其余的虾肉加入肥肉、鸡蛋、玉米粉搅打至幼滑。 Set aside 100g shrimp meat and blend the remaining shrimp meat with pork fat, egg, cornstarch until smooth.
加入切粒的虾仁粒、蒜碎,小辣椒和九层塔,搅拌均匀。Add the diced shrimp, minced garlic, bird's eye chilies and Thai basil. Mix well.
取一米纸,均匀地铺上一层薄薄虾肉馅。Take a sheet of rice paper and evenly spread a thin layer of the shrimp mixture.
小火慢慢煎熟, 一面大概5分钟即可,搭配蘸酱一同享用。Pan-fry over low heat until one side is golden brown, about 5 minutes. Serve with the dipping sauce.
