潮式蒸富贵鱼 Teochew Steam Fish

【材料】
非洲鱼1条、三层肉50克(切薄片)、姜丝少许、咸水梅3颗、咸菜100克(浸泡切
丝)、香菇3朵(浸软切丝)、辣椒2条(切丝)、芫荽少许
【调味料】
麻油2小匙、盐1⁄2小匙
【做法】
1. 鱼先用白醋加清水洗过去腥,以盐腌鱼备用。
2. 将鱼排在碟上,铺上所有材料,滴入麻油,放入蒸炉蒸15分鈡即可。(图1-3)

【Ingredients】
1 Tilapia fish, some juliennes ginger, 50g pork belly (slices), 3 pcs
salted plum, 100g pickled mustard (soaked and juliennes), 3 pcs Chinese
mushroom(soaked and juliennes), 2 red chili (juliennes), some coriander
【Seasonings】
2 tsp sesame oil, 1⁄2 tsp salt
【Method】
1. Wash fish with white vinegar and water to remove if fishiness and then
marinate with some salt.
2. Place fish in plate, top with all juliennes ngredients and pork belly,
sprinkle sesame oil over and steam  for 15 minutes, done.(pic1-3)
