    Step 1

    烧热炸油,放入薯条炸至7分熟,捞出待凉些,再放回滚油炸至金黄色浮起,捞出沥油备用。Heat the frying oil, add the French fries deep fry until 70% cooked, remove and let it cool. Reheat oil, deep fry the French fries again until golden brown, remove and drain the oil, set aside.

    Step 2

    同一锅热油,放入江鱼仔炸至香脆,捞出沥油备用。Heat oil in the same wok to fry the anchovies until crispy, remove to drain oil and set aside.

    Step 3

    锅中留2-3汤匙油,爆香磨烂后的配料,加入咖喱粉和调味料炒香。Leave 2-3 tbsp oil in the wok to saute ground ingredients, add curry powder and seasonings to fry until fragrant.

    Step 4

    把炸好的薯条和江鱼仔放入锅中,翻炒均匀至全部材料沾满辣椒酱即可。Put the French fries and anchovies in the wok and stir-fry evenly until all the ingredients are covered with chili sauce.
