焖辣味鸡 Braised Hot and Spicy Chicken

【材料】
A:全鸡1只
B:辣椒干10克、姜20克、小葱头20克、蒜头30克、亚叁皮1片
【酱料】混合
番茄酱100克、蚝油1汤匙、盐适量、白糖适量、酱油100克、黑酱油½汤匙、辣椒酱150克、酸梅酱150克
【做法】
1. 将所有酱料混合备用。(图1)
2. 起锅热油,把B料放入炒一会。
3. 加入清水,再放入调味料,煮至滚。(图2-3)
4. 把鸡肉放入,煮35-45分钟即可。(图4)

【Ingredients】

B:10g dried chili, 20g ginger, 20g shallot, 30g garlic,1pcs assam skin
【Sauce ingredients】combined
100g tomato sauce, 1 tbsp oyster sauce, salt and sugar to taste, 100g soya sauce, ½ tbsp dark soya
sauce, 150g chili sauce, 150g sour plum sauce
【Method】
1. Mix all the sauce ingredients and set aside.(pic 1)
2. Heat up the oil in the wok, saute dry ingredients and stir-fry for a while.
3. Pour in water, add in the combined sauce ingredients and bring to boil. (pic 2-3)
4. Add in the chicken and boil for 35 to 45 minutes done. (pic 4)
