牛油果青蒜酱意粉 Avocado Pesto pasta

材料
A : 通心粉200克
B : 橄榄油 2 汤匙、蒜头 2 瓣(剁碎)、虾 100 克(去壳留尾)、樱桃番茄 10 粒、清水 50-100 毫升
青蒜酱材料
牛油果 1 粒、蒜头 3 瓣、烤腰豆 50 克、青葱粒 ¼ 杯、九层塔 1 杯、柠檬汁 2-3 汤匙、橄榄油 2 汤匙、盐和胡椒粉适量
做法
1 将通心粉根据包装指示煮熟。(图1)
2 将所有青蒜酱材料放入电动搅拌机里,搅拌至细。(图2-5)
3 起锅热油,炒蒜茸和虾,加入盐和胡椒粉,然后加入番茄和少许水,略炒后熄火。(图6)
4 把煮好的意粉装入大碗里,和青蒜酱拌均,然后加入虾和番茄,即可上桌。(图7-8)

FINELY GROUND SPICE PASTE
A : 200g spaghetti
B : 2 tbsps olive oil, 2 cloves garlic (chopped), 100g prawns (skinned & tail left intact), 10 pcs cherry
tomatoes, 50-100 ml water
SEASONING
1 avocado, 3 cloves garlic, 50 g roasted cashewnuts, ¼ cup chopped cilantro, 1 cup basil, 2-3 tbsps lemon
juice, 2 tbsp olive oil, sea salt and pepper to taste
METHOD
1 Cook spaghetti according to instruction till al-dente. (pic 1)
2 Prepare the pesto sauce by blending together all of the pesto ingredients until fine. (pic 2-5)
3 Warm a large pan over medium-high heat. Heat oil, sauté some chopped garlic & fry the prawns
with sea salt and pepper. Add in tomatoes and sauté for awhile adding some water to just let the
tomatoes cook slightly. Turn off heat. (pic 6)
4 Add the pasta to a large bowl and toss with the pesto sauce, adding the prawns & tomatoes and
serve. (pic 7-8)
