家里若有气压锅就一定要试试这道充满酒香的烩猪手,只需要半小时就能吃到软嫩弹牙且入味的玫酒猪手。
猪手洗净后按骨缝分成小块。Wash trotters and cut in small size, blanch into boiling water, drain and set aside.
煮滚水,放入少许姜片、青葱和生抽,放入排骨焯烫一下,捞出后再洗净表面的血沫,备用。
气压锅加入少许的油再放入姜丝、蒜片爆香,放入猪手块,小火翻炒五分钟。Heat some oil in pressure cooker, sauté ginger and garlic till fragrant. Add in pig trotters, fry with low heat for 5 mins.
淋入兴兴发特醇米酒和长城牌天津浙醋焖烧三分钟,再加入剩余的材料,注入足以盖过猪手表面上的清水,再加入调味料,关盖,焖煮20分钟。Pour in Pearl River Bridge Super Mellow Miziu and Greatwall Vinegar, simmer for 3 minutes. Add in remaining ingredients and water which enough to cover all the ingredients. Toss in seasoning, mix well ,cover the lid and cook for 20 minutes.
把气压锅时间到把蒸气解放,把猪手放入碗里。Release the air before remove the trotters.
将汤汁倒出来去锅里开火煮滚再转小火勾少许芡粉最后放入少麻油,熄火。Use the trotters sauce cook with low heat, thicken with some corn starch, off heat.
再把酱汁淋在猪手再放些芫西叶和红辣椒丝点缀即可。Pour over the sauce on trotters, garnish with some chilli shredded and coriander leaves, done.
