    Step 1

    将切好的鸡丁放入大碗里,加盐、绍兴 酒、少许的水和鸡蛋,搅拌均匀,最后 才加薯粉再继续搅拌均匀过后放一旁 腌制10分钟。 Marinate chicken cubes with salt, Chinese cooking wine, some water and egg; and then mix in tapioca flour and stand for 10 minutes

    Step 2

    热锅下油烧至七成热,放入鸡丁滑散后 盛出备用, Heat oil in wok, add in chicken cubes to blanch and dish out;

    然后用剩下的油,把黄瓜过油备用。 and then blanch cucumber briefly and dish out.

    锅下油烧热,放入甜酱炒香后加入清水 ½杯,再加入老抽、白糖、辣油,炒大约 20秒, Heat oil in a clean wok, sauté sweet soy bean paste until fragrant, add in ½ cup of water, soy sauce, sugar and chili oil, stir-fry for about 20 seconds

    Step 5

    最后再放入鸡丁和黄瓜炒均匀即可。 Toss in chicken and cucumber cubes, dish out.
