番茄辣酱鸡翅膀 spicy tomato chicken wing

材料:

鸡翅膀3对(全翅,洗净滴干)、沙律菜4份、炸油适量、辣椒油适量

腌料:

姜80克(拍烂) 、蒜头10瓣(拍烂) 、酱油200毫升、辣椒干12条(切2公分长) 、蚝油30克、盐和白糖适量、鸡精粉1/2茶匙、食油适量、清水30毫升

酸辣番茄酱:

辣椒200毫升、番茄酱100毫升、黄梨80克(切粒) 、挂皮1小段、橙汁80毫升、黑胡椒碎2克、黑酱油1/2茶匙

做法:

  1. 不腌料的姜以油爆香。
  2. 加入蒜茸和辣椒干。
  3. 倒入清水、酱油及蚝油,煮至滚。
  4. 加入盐和糖调味,转小火焖10分钟。
  5. 加入鸡翅膀,以最小火焖10分钟,煮至约八成熟后取出,腌汁待凉备用。

番茄辣酱做法:

  1. 把所有酱汁和橙汁混合,然后加入黄梨粒和挂皮。
  2. 煮至滚后转小火焖15分钟,间中搅拌圆满焦底。
  3. 取出挂皮,把材料搅拌至黄梨变糊。
  4. 加入黑胡椒调味。

吃法:

  1. 把鸡翅膀炸至金黄色后摆入盘。
  2. 浇上酱汁再滴入数滴辣椒油(随意) 。
  3. 配沙律吃。

Ingredients:
6 pcs Chicken wing (wing with drumlet) – wash and drain
4 portion Side salad
As needed Cooking oil- for deep frying
As needed Tabasco
Marinade
80 gm Ginger – crush
10 cloves Garlic – crush
200 ml Light Soya sauce
12 pcs Dry chilli – cut into 2 inches length
30 gm Oyster sauce
t.t Sugar, salt,
½ tspn Chicken stock powder
As needed Cooking oil to sauté
30 ml Water
Spicy tomato sauce
200 ml Chilli sauce
100 ml Tomato ketchup
80 gm Fresh pineapple – cut into cubes
1 stick Cinnamon stick
80 ml orange juice
2 gm Blackpepper crush
½ tspn Dark soy sauce

Method of Preparation:
To marinade the chicken wing:
1. Sauté ginger with cooking oil till aromatic in a large pan/work.
2. Add in garlic and dry chilli.
3. Stir in water, light soya sauce and oyster sauce. Bring to boil.
4. Season to taste with sugar and salt, simmer for 10 minutes.
5. Add in chicken wing and poach for about 10 minutes at very low heat. *remove from the wing form marinade once the fleshes of wings are shrunk (the wing should be 80% cook). Separate the wing from the marinade and allow to cool down.
To prepare the spicy tomato sauce:
6. bine all the sauce and orange juice together in a sauce pan, add in pineapple cubes and cinnamon stick.
7. Bring to boil and simmer at low heat for 15 minutes.*stir frequently to prevent burning due to high contain of sugar.
8. Discard the cinnamon stick and blend the sauce till pineapples are puree.
9. Season with Blackpepper crush.
To serve:
10. fry the chicken wing till golden brown, transfer to a mixing bowl.
11. Toss with spicy tomato sauce and add in a few drops of Tabasco.*add more Tabasco if desire.
12. Serve with side salad.
