米粉沙拉 Vermicelli Salad

【材料】
A:米粉 100克、猪绞肉 100克、虾米 1汤匙(泡软)
B:高丽菜 200克(切丝)、红萝卜 50克(切丝)、大洋葱 1⁄2个(切丝)、小葱头 2粒(切丝)、辣椒 1支(切片去籽)、芫茜1束(切碎)
【酱料】
鱼露 50毫升、泰国美杷娘鸡汁辣椒酱 50毫升、柠檬汁 30毫升、蜜糖 1汤匙、蒜末 1汤匙
【做法】
1. 米粉泡水后,放入沸水中烫软后捞起过冷水,筛干水份后剪成小段,备用。(图1)
2. 烧热油锅,爆香虾米,下猪绞肉,翻炒至熟,捞起装盘。
3. 将所有的调味料,混合均匀。(图2)
4. 取一大碗,混合米粉、虾米、猪绞肉及材料B,淋上酱料拌匀,即可享用。(图3)

【Ingredients】
A:100g vermicelli, 100g minced meat, 1 tbsp dried shrimp(soaked)
B:200g cabbage (juliennes), 50g carrot (jullennes), 1⁄2 onion (juliennes), 2 shallot (sliced), 1 red chilli (sliced), 1 bunch corrianer (chopped)
【Sauce Ingredients】
50ml fish sauce, 50ml Thai chilli sauce, 30ml lemon juice, 1tbsp honey, 1 tbsp chopped garlic
【Method】
1. Soak vermicelli in water, and then scud in boiling water until soften, soak in cold water, drain and cut into blocks. (pic 1)
2. Heat oil in wok, sauté dried shrimp until fragrant, toss in minced meat and stir-fry until cooked, dish out.
3. Mixes all sauce ingredients.(pic 2)
4. Mixes minced meat, vermicelli and ingredients B in a mixing bowl, pour in sauce and serve.(pic 3)
