糖醋龙眼鸡Sweet & Sour Longan Chicken

【材料】
鸡腿肉450克(切小块)、炸鸡粉2大匙、蒜茸1茶匙、罐头龙眼1⁄2 罐、大洋葱1粒、青葱 2条(切段)、番茄 2粒(切粒)、青瓜1条(切丝)、红萝卜1条(切丝)、红辣椒丝少许 (装饰用)

【腌料】
生抽 1大匙、麻油1茶匙、浓缩鸡精素1小匙、盐1⁄2 茶匙、胡椒粉少许、鸡蛋 1 粒

【酱料】
浓缩鸡精素1小匙、清水 5汤匙、糖2汤匙、番茄酱3汤匙,酸梅酱2汤匙、辣椒酱11⁄2 汤匙、麻油1茶匙、柠檬汁1汤匙、粟粉1大匙

【做法】
1.将鸡肉加入腌料腌制1小时,炸前沾炸鸡粉放入热油中炸至金黄色,捞起沥干油备用。
2.将红萝卜和青瓜丝加入少许盐和糖的清水浸泡5分钟。取出挤干水分,铺于盘上。
3.将全部酱料搅拌均匀,煮成芡汁。
4.锅中留油大约2大匙,爆香蒜米,加入大葱、龙眼、番茄粒及葱段炒匀。
5.最后,加入炸鸡块和酱汁一起拌匀即可。

【Ingredients】
450g chicken whole leg(cut small pieces), 2 tbsp frying powder, 1 tsp chopped garlic, 1⁄2 canned Longan in syrub, 1 big onion, 2 stalk spring onion(cut block), 2 tomatoes(cut small cube), 1 cucumber(sheredded), 1 carrot (sheredded), red chili for garnishing (sheredded)

【Marinate Ingredients】
1 tbsp soy sauce, 1 tsp sesame oil, 1 tsp concentrated chicken stock, 1⁄2 tsp salt, dash of pepper to taste, 1 egg

【Sauce Ingredients】
1 tsp concentrated chicken stock, 5 tbsp water, 2 tbsp sugar, 3 tbsp tomato sauce, 2 tbsp plum sauce, 1 1⁄2 tbsp chili sauce, 1 tsp sesame oil, 1 tbsp lemon juice, 1 tbsp corn flour

【Method】
1.Marinade chicken with the ingredients for 1 hour, coat with frying powder and deep fry in hot oil till golden brown, drain.
2.Soak sheredded cucumber and carrot in water together with salt and sugar for 5 minutes.
3.Cook all the sauce ingredients, thicken with starch, set aside.
4.Heat 2 tbsp oil in wok, saute garlic till fragrant, add in big onion, longan, tomatoes cube and spring onion.
5.Pour in prefried chicken and sauce, stir well and serve.
