素豆腿Bean Curd Vege Rolls

【材料】
腐竹片600克、豆腐皮5片、香菇8朵(浸软切丝)、笋片200克(切丝)、红辣椒5条(切丝)、花生碎2汤匙

【调味料】
酱油1⁄2茶匙、黑酱油1⁄2茶匙、麻油1⁄2茶匙、糖1⁄2茶匙、胡椒粉1⁄2茶匙、五香粉1⁄2茶匙、素蚝油1汤匙

竹筷子15根、草绳5条

【做法】
1.先将腐竹浸软,切丝备用。
2.锅内热油,加入腐竹炒香,放入香菇、笋丝及调味料翻炒均匀成馅料,捞起待凉备用。(图1)
3.摊开豆腐皮,铺上适量馅料,再排入红辣椒丝及花生碎,卷好成长形,再用3跟筷子以草绳绑成腿棒状。(图2-3)
4.将素豆腿排入蒸镬中,以大火蒸20分钟。(图4)
5.熟后待凉除去草绳及筷子,切片享用。

【Ingredients】
600g beancurd skin, 5 tofu skin, 8 mushroom(soaked and sliced), 200g bamboo shoots(sliced), 5 red chilis(sliced), 2 tbsp ground peanuts

【Seasoning】
1⁄2 tsp soy sauce, 1⁄2 tsp dark soy sauce, 1⁄2 tsp sesame oil, 1⁄2 tsp sugar, 1⁄2 tsp pepper, 1⁄2 tsp five spice powder, 1 tbsp vege oyster sauce

【Method】
1.Soaked beancurd skin in water till soft, shredded and set aside.
2.Heat some sesame oil in wok, saute beacurd skin together with mushroom and bamboo shoot till fragrant, add in seasoning and fry well, set aside.(pic 1)
3.Place one scoop of filling on top of tofu skin, spread slice chili and peanuts over, roll up and tie with 3 bamboo chopstick and string.(pic 2-3)
4.Place the vege roll in a steamer, steam with high heat for 20 minutes.(pic 4)
5.Remove the string and chopstick, slice and served.
