红鱼香嫩照满室 Braised Red Snapper

[材料]
红枣鱼1条(约500克)、荷兰豆10条、红辣椒1条(切片)、酸菜40克(切丝)、嫩姜1小块、上汤500毫升
腌料:
粟粉和胡椒粉少许、生抽2汤匙
[调味料]
豆瓣酱1 1/2汤匙、味精1/2茶匙、糖1茶匙、胡椒粉少许
[做法]
1.鱼洗净,用2汤匙生抽,少许胡椒粉及粟粉拌匀腌10分钟,然后以热油炸至金黄色待用。
2.留油少许爆香嫩姜和豆瓣酱跟着加入其余的材料及调味料煮滚。
3.放入鱼焖煮片刻至入味便可上碟。
Ingredients:
1 red snapper (about 500g), 10 pcs snow pea, 1 red chili (sliced), 40g pickled mustard (juliennes), 1 piece young ginger, 500ml stock
Marinate Ingredients:
Dash of corn flour & pepper, 2 tbsp soy sauce
Seasoning:
1 1/2 tbs[ soy bean paste, 1/2 tsp MSG, 1 tsp sugar, dash of pepper
Method:
- Wash fish and then marinate with 2 tbsp soy sauce, dash of pepper and corn flour for 10 minutes, and the deep fry until golden brown.
- Keep some oil in wok, sauté ginger and soy bean paste until fragrant, and then toss in all other ingredients and seasoning, bring to boil.
- Add in fish and simmer until flavor infused, dish out.
