农家菜肉,顾名思义,是指农村人家以传统方法种植的蔬菜、养殖的家禽以及当地特产为原材料烹制的佳肴料理,同时也称土菜。近年来,在城市周边主打农家味的餐厅、私房料理,大有崛起之势,除了是口味纯朴的美食,其实还有是对城市人的一种心理抚慰。 “农家菜”这名词赋予了隐喻: 空旷的山林农村,清爽的大自然、宁静且安逸,田园风景如画,绿水如流、走地鸡鸭满山跑……在现实中无法以诗意栖居,但却可以形容、想像满足人们的精神需求。家常土菜料理对我来说,更像是回到小时候的深长老宅,几房人一张大圆桌,那桌上的菜肴,有时丰盛有时零落,但一眼看去,都是在地的 食材,手工腐竹可以爆炒也可以煮汤,微辣且爽口的韭菜炒腊肉很是好吃……

干锅内下猪油,中火将腊肉煸香。Heat lard in a dry wok over medium heat, stir-fry the bacon until fragrant.
加入姜蒜,翻炒至香。Add minced ginger and garlic, stir-fry until fragrant.
加入的韭菜和腐竹,转大火煸炒至断生。Add the Chinese chive flowers and soaked tofu skin, stir-fry over high heat until slightly cooked.
加入所有调味料和辣椒圈,翻炒均匀,即可熄火,趁热享用。Add all seasonings and chili slices, stir-fry evenly, then turn off the heat and serve hot.
