    心得交流站 : 芋头最好不要煮过头,容易散掉,所以这里分两次下。

    Step 1

    用腌料腌排骨数小时,收在冰箱里。Marinate spare-ribs with marinade for several hours in the refrigerator.

    Step 2

    把芋头炸至金黄色,盛出置放一旁。Deep-fry yam in hot oil until golden. Dish out and leave aside.

    Step 3

    以热油川烫腌排骨一会后盛出。Blanch marinated spare-ribs in hot oil briefly. Dish out and drain well.

    Step 4

    热1茶匙油和1茶匙麻油,把姜和蒜头爆香,然后加入香料炒一会。Heat 1 tsp oil and 1 tsp sesame oil in a saucepot. Sauté ginger and garlic until aromatic. Add in Spice ingredients, sauté briefly.

    Step 5

    加入排骨和一半的芋头及调味料,大火煮滚后转小火焖煮20-30分钟。Add in spare-ribs,half portion of yam and seasoning. Bring to a quick boil. Reduce heat and braise for 20-30 minutes.

    Step 6

    加入剩余的芋头,继续煮多10分钟或至排骨熟透。Add the rest of the yam and continue to cook for 10 minutes or until spare-ribs are cooked through.

    Step 7

    灒入少许花雕酒后即可上桌。Splash in a little Shao Xing wine for aroma. Dish out and serve.
