    心得交流站 : 先把芋头炸熟,即容易炒,也比较香。

    Step 1

    芋头切长条后沾生粉,然后炸熟至金黄色。Cut yam into long strips. Coat with corn flour and deep-fry until golden in colour and cooked through.

    Step 2

    芥兰去叶取茎切片。Discard the old leaves from kai lan,use the main stalk only and cut into slices.

    Step 3

    起锅热1汤匙麻油,把蒜茸和姜片爆香。Heat a tablespoon of sesame oil in a wok,saute chopped garlic and ginger slices till fragrant.

    Step 4

    加入南乳,炒至香。Add mashed red fermented beancurd. Keep stir-frying till fragrant.

    Step 5

    灒入绍兴酒,然后加入芋头。Drizzle in Shao Xing wine to get the aroma. Put in yam.

    Step 6

    大火炒均后加入调味料,迅速拌均后加入芥兰,炒均即可盛出。Stir-fry briskly and add seasoning. Toss quickly then add kai lan stalks. Stir-fry briskly to combine.
