    Step 1

    用少许盐和胡椒粉腌鱼头,然后沾生粉,炸熟后置放一旁。Lightly season fish head pieces with salt and pepper. Coat with some tapioca flour, deepfry and put aside.

    Step 2

    把水煮滚,加入材料B和咸菜,焖煮8-10分钟,然后加入炸芋头,再煮4-5分钟。Bring water to a boil with ingredients B and salted mustard. Simmer for 8-10 minutes. Add yam pieces and boil for 4-5 minutes.

    Step 3

    加入鱼头、番茄及苦瓜,再煮2-3分钟。Add fish head pieces,tomato and bitter gourd.Cook for another 2-3 minutes.

    Step 4

    把鱼头汤料分盛在2个瓦煲里,然后分别放入1团炸伊面,大火煮滚后撒入青葱粒即可。Scoop soup with contents into 2 clay pots. Add one skein of noodle to each clay pot.Cook to a quick boil. Serve with a sprinkling of chopped spring onion.
