将传统黄梨饼造型换成花朵造型,更惹人爱。
【黄梨馅做法】 把全部材料放入深锅慢火煮约30-45分钟至结成团和发亮,冷却后搓成小圆球。(图1) 【To cook pineapple filling】 In a heavy based pot, cook filling ingredients over low heat till mixture is thick, glossy and sticks together, about 30 minutes - 45 minutes.Adjust sugar to taste.Remove and set aside to cool together, about 30 minutes - 45 minutes.Adjust sugar to taste.Remove and set aside to cool. Shape into small balls of pineapple jam&set aside.(pic 1)
【挞做法】 1.用电动搅拌器,把牛油、糖及盐搅拌2分钟至发起。 【To prepare pastry】 1.Using an electric beater with a paddle attachment, beat butter with icing sugar&salt until creamy about 2 minutes.
2.加入蛋黄和筛过的面粉及冰水,搅拌成软面团。(图2-3) 2.Beat in egg, then sifted flours and adding cold water to form a soft dough. (pic 2-3)
3.用湿毛巾盖住面团,免得干掉,若已经干了可加1-2汤匙水再揉至软。 3.Cover dough with tea towel to prevent drying. Should the dough dries up halfway through, add 1-2 Tbsp cold water & knead until a soft dough is achieved.
4.把面团杆成1公分厚,以花刀割出面皮,铺在挞模上,挞模形状随意。(图4-5) 4.Roll dough out about 1cm thick, using a flower cutter, cut and place dough into a tart tray. You may use any tart casing.(pic 4-5)
5.把黄梨馅放在挞中央,涂上蛋液。(图6-7) 5.Place pineapple filling in the centre of the dough and brush tops with beaten egg wash.(pic 6-7)
6.放入预热至180℃的烤炉里烤20分钟。(图8) 6.Bake tarts in pre-heated oven@1 80Cfor2O minutes.(pic 8)
7.待完全冷却后才收入密封罐子。 7.Cool before storing in airtight containers.
