优格又称酸奶酪,含有丰富的钙质。
优葛水晶馅料做法Method for Agar-agar filling: 1.把糖、盐及燕菜精放入锅中拌匀,然后加入清水和牛奶慢火煮,不停搅拌。In a small saucepan,mix in sugar,salt,agar-agar powder. Stir to mix & add in water and milk. Cook over low heat,stirring with a wire whisk.
2.另外在一个碗里把优葛及栗米粉混合。倒入燕菜料中,再煮至滚后即刻熄火,加入草莓粒。In a bowl combine yoghurt with cornflour.Once mixture comes to a boil,add yoghurt mixture,bring to a boil again & quickly turn off heat. Mix in cubed strawberries.
3.把优葛材料倒入派模中,让它凝固。Pour yoghurt jelly mixture into the small pie moulds ,allow to set completely.
水晶皮料做法Method for cooking skin: 1.把糖、盐及燕菜精放入煲里拌匀,加入清水煮至滚。In a pot,combine sugar,salt,agar-agar powder,add in water & bring to a boil.
2.用电动搅拌器把草莓搅拌成泥,加入燕菜料中,转小火,不停搅拌至起泡。Using an electric blender,puree the strawberries until fine.Pour into the agar-agar mixture.
3.熄火,然后加入粉红色素。Lower heat and stirring continuously with a hand whisk until the mixture starts to bubble. Turn off heat. Add some pink food colouring.
月饼做法To assemble mooncake: 1.倒½公分厚的草莓水晶皮料入月饼印中,让它冷却至几乎凝固。Pour ½cm layer of mooncake jelly skin mixture into a mooncake mold,allow to cool until almost set.
2.把一个优葛馅料放在月饼印中间。Place a prepared yoghurt filling in the center of the mold.
3.再倒入草莓水晶皮料,让它凝固后收入冰箱。Top up with mooncake jelly skin mixture,Allow to set completely before chilling in the refrigerator.
4.把水晶月饼敲出再收入冰箱,冷吃。Unmould jelly mooncake and keep refrigerated until ready to serve.
