选新鮮的虾首要注意虾头黏着虾身很稳沒脱落,虾头有变黑就不新鮮了。

    Step 1

    把虾去须,洗净滴干。Trim the prawns. Rinse and set aside.

    Step 2

    把虾肉扑上干生粉待用。Coat prawns with corn flour.

    Step 3

    热油,把虾炸至金黄色,滴干油。Heat up cooking oil,deep-fry prawns until golden browns. Remove and set aside.

    Step 4

    另外热锅,把青葱,辣椒及姜爆香,然后加入炸虾和调味料,炒均即可上碟,趁热吃。Heat up a wok,stir fry chopped spring onions,red chilli and ginger. Add in deep fry prawns and seasoning,stir well then dish out on plate. Serve hot.
