    对于很多厨艺高超的家庭主妇来说,这是一道零难度的料理。但对厨房小白来说,要做好这道菜也要懂得其中小撇步,煮出来的茄子才能保留营养与漂亮色泽。

    Step 1

    把茄子外面涂上食油后,放入蒸锅内蒸至大约10分钟或至变软熟透。Brush eggplant with some oil, steam for 10 minutes till soften.

    Step 2

    热油内放入红葱头丝炸脆,捞出待用。Heat oil in wok, deep fry shallot till crispy, drain and set aside.

    Step 3

    蒸好的茄子淋上红葱头热油,倒入适量酱油,撒上青葱、小辣椒粒,最后再加上红葱头酥后即可上桌。Drizzle the eggplant with shallot oil, add some soy sauce and garnish with green onions and red chilli. Lastly sprinkle with some crispy onion on top, enjoy immediately.
