西式大草虾 Grilled Butter Prawns

【材料】
虎虾600克(约20- 25只)、指天椒5条、咖哩叶3束、马芝琳2汤匙、生粉1汤匙、炸油适量、蛋丝½ 碗
【调味料】
盐、白糖及花雕酒各¼茶匙、鸡粉½ 茶匙
【做法】
1. 虎虾去须脚,洗净滴干后沾生粉。
2. 起锅热油,把虾炸熟,盛出滤油备用。(图1-2)
3. 用热锅溶解马芝琳,把指天椒和咖哩叶炒香,然后加入虾和调味料,炒均。(图3-4)
4. 把蛋丝加入拌炒均匀即可上桌。(图5-6)

【蛋丝材料】
蛋黄5个、炸油
蛋丝做法:起锅热油,徐徐倒入蛋黄不停向同一方向转动锅铲,用中火把蛋丝炸至酥脆即成,滤油待凉后
才用。

【Ingredients】
600g tiger prawns(about 20 to 25 nos), 5 nos chili padi, 3 sprigs curry leaves, 2 tbsp margarine, 1 tbsp
corn flour, oil for deep frying, ½ bowl egg floss
【Seasoning】
¼ tsp salt, ¼ tsp sugar, ¼ tsp hua diao wine, ½ tsp chicken powder
【Method】
1. Trim tiger prawns, wash and drain; and then sprinkle with corn flour evenly.
2. Heat oil in a wok till hot. Deep fry prawns till cook, drain and set aside. (pic 1-2)
3. Heat up margarine in a wok. Fry chili padi and curry leaves till fragrant. Add in the prawns and
seasonings. (pic 3-4)
4. Lastly add in egg floss and stir evenly. (pic 5-6)
