西班牙海鲜饭 Seafood Paella

【材料】
白米300克(洗净后浸泡约30分钟)、橄榄油 3-4汤匙、蒜头2瓣(剁碎)、大葱1粒(剁碎)、番茄120克(切丁)、红灯笼椒70克(剁碎)、鸡肉230克(切1公分方块以1⁄2茶匙盐、1 茶匙鲜迷迭香和黑胡椒粉腌妥)、香肠150克(切片)、大虾100克(去壳肠泥、以1⁄2茶匙糖腌妥)、苏东80克(切片)、藏红花丝1⁄2茶匙(剁碎)、甜椒粉2茶匙、番茄膏2汤匙、鸡高汤550毫升+鸡粉1茶匙、蛤蜊100克、冻青豆1⁄2杯
【做法】
1. 把蒜茸和葱茸放入大不粘锅里爆香。(图1)
2. 加入番茄和鸡肉,炒3分钟至黄。加入香肠及灯笼椒,炒1分钟。(图2-3)
3. 加入苏东、虾和蛤蜊,炒数秒钟。(图4)
4. 加入白米,藏红花丝,番茄膏及甜椒粉。(图5)
5. 倒入鸡高汤和适量的盐,煮至滚,然后熄火,加盖焖15分钟,最后加入青豆。(图6-8)
6. 再把锅盖盖上,继续煮5分钟即可。

【Ingredients】
300 g long grain rice (washed and soaks for 30 minutes), 3-4 Tbsps olive oil, 2 cloves garlic(chopped), 1 big
onion(chopped), 120 g tomatoes(diced), 70g chopped red capsicum, 230g chicken meat (cut 1cm cube, marinated with 1⁄2 tsp salt and 1 tsp chopped fresh rosemary and black pepper), 150 g sausages(sliced),100 g large prawns(peeled and deveined, marinated with 1⁄2 tsp sugar), 80 g squid(sliced), 1⁄2 tsp saffron threads(crushed), 2 tsps sweet paprika, 2 heaped Tbsps tomato puree/paste, 550 ml chicken broth + 1 tsp chicken stock granules, 100 g clams, 1⁄2 cup frozen green peas(thawed)
【Method】
1.Sauté garlic and onions in a large non-stick pan until fragrant. (pic 1)
2.Add tomato and chicken; cook 3 minutes on each side or until lightly browned. Add sausage and capsicum to pan; cook 1 minute.(pic 2-3)
3.Add squid, prawns and clams to the pan, cook for a few seconds.(pic 4)
4.Add in rice, with saffron threads, tomato paste and sweet paprika. (pic 5)
5.Pour in chicken broth and salt to taste; bring to a boil, turn off heat and cover with a lid for 15 minutes, then stir in peas. (pic 6-8)
6.Cover again and cook for additional 5 minutes.
