豆豉炒鸡块 Stir-fried Chicken with Fermented Soy Bean

材料 :
蒜茸1大匙、姜碎½大匙、洋葱碎1大匙、豆豉2大匙(洗净滤干水)、白斩鸡½只(斩块)、红萝卜片50克、洋葱片50克、青灯笼椒80克(切片)、红辣椒1条(去籽切片)
调味料 :
水5大匙、生抽2大匙、蚝油1大匙、糖½小匙、胡椒粉¼小匙、麻油½小匙
制法 :
1. 用2大匙油爆香蒜茸和姜碎,加入洋葱碎和豆豉炒香。

2. 加入其余材料炒匀,加入调味料炒匀,煮滚,拌炒至汁收干,即可盛起。(图3-5)

INGREDIENTS :
1 tbsp chopped garlic, ½ tbsp chopped ginger, 1 tbsp chopped onion, 2 tbsp fermented soy bean (wash and drain), ½ boiled chicken (chop into pieces), 50g carrot slices, 50g onion (sliced), 80g green capsicum (sliced), 1 red chili (sliced)
SEASONING :
5 tbsp water, 2 tbsp soy sauce, 1 tbsp oyster sauce, ½ tsp sugar, ¼ tsp pepper, ½ tsp sesame oil
METHOD :
1. Sauté garlic and ginger with 2 tbsp oil until fragrant; and then toss in onion and fermented soy bean.(pic 1-2)
2. Add in all other ingredients and stir-fry until well mixed; toss in seasoning and bring to boil until gravy thicken, dish out.(pic 3-5)
