    提示:如果不要蒸茄子,可以和肉碎一起炒熟,然后拌入酱汁亦可。

    Step 1

    茄子洗净后大火蒸至熟软,熄火,切段并排入碟。Rinse brinjals and steam over high heat for 10 minutes or until soft and cooked. Remove from heat. Cut into sections. Arrange brinjals on a serving plate.

    Step 2

    起锅热油和麻油,把蒜茸和虾米爆香。Heat oil and sesame oil and sauté garlic and dried shrimps until fragrant.

    Step 3

    加入猪肉碎和虾肉粒,炒均。Add in pork and prawns. Stir-fry well.

    Step 4

    加入指天椒和其他材料,炒均后盛出。Add in bird’s eye chillies and other ingredients. Fry well then dish out.

    Step 5

    把酱汁材料煮滚后淋在茄子上,再铺炒肉碎即可。Cook all sauce ingredients to a boil. Spoon over the brinjals and serve with the pork and prawn mixture as a topping.
