    这是一道常见的家常菜,酱蒸带辣,如果有小朋友要吃,可以自行减低辣度。

    Step 1

    锅内放水煮沸,加入1汤匙绍兴酒,姜片。快速把鱼头放入沸水中焯水30秒左右即可沥干备用。Bring a pot water to boil, add in 1 tbsp Shao xin wine and ginger. Quickly blanch the fish head into the boiling water for 30 second, drain.

    Step 2

    把鱼放入深碗待用。加入绍兴酒在鱼头上。Arrange the fish head on a big bowl, drizzle with some Shao Xin wine.

    Step 3

    锅内放油烧热,把辣椒糊倒入热油内炒香。Heat oil in wok, saute chilli paste till fragrant.

    Step 4

    辣椒糊炒香后,放入豆酱和辣豆酱继续翻炒,炒香。Add in fermented soybean paste and spicy fermented soybean paste, continue stir fry well.

    Step 5

    加入酸梅酱,翻炒均匀30秒。(如果甜味不够,可以再加)Add in plum sauce and stir-fry for another 30 second.

    Step 6

    把炒香后的酱料铺在鱼头上,放入蒸炉蒸5分钟至全熟。Place sauteed fermented bean paste onto fish head. Continue steaming for another 5 minutes. Serve hot with white rice.

    Step 7

    上桌前,放点芫荽在酱蒸鱼头上点缀和提味。Top with some coriander leaves before serve.
